The Statler Hotel at Cornell University is delighted to announce a career opportunity for our next Regent Lounge Bar Manager to join our team. As a member of our food & beverage leadership team, you work directly with students and full-time staff, leading them through our day-to-day operations and special events, while providing an exceptional experience for our guests and visitors.

Hire, supervise, train, schedule, provide performance feedback, conduct performance reviews; may, handle performance issues and disciplinary actions for banded staff.

Collaborate with chef/nutritionist to assure menu items are well balanced and provide variety; oversee the development, testing, and implementation of new recipe.

Ensure that sanitation guidelines and health department regulations are maintained. Hold staff accountable for upholding regulations.

Work with clients/customers to promote and/or sell services.

Supervise the repair and maintenance of equipment and facilities.

Ensure the accuracy of inventories

Plan and organize special promotions including combo meals/LTOs/Coupon. Recommend and assist in development and implementation of marketing, advertising and promotions.

Prepare and execute annual and quarterly budgets from $2 million to $5 million; control revenue and expenses to meet budget; report on various metrics for evaluation of unit financial performance.

Plan and manage special events/catering.

Maintain awareness of market/consume trends; identify product needs. May conduct focus groups and compile data for product forecasting

Responsible for promotion planning and oversee merchandise displays

Participate in developing pricing strategies; forecast labor costs, staffing needs and plate costs

Serve as first point of contact for managers in dealing with operational and staff concerns.

Develop and maintain strong relationships with clients which may represent a wide variety of groups on campus.

Forecast customer counts and preference; plan menus/labor accordingly.

Respond to immediate and critical customer feedback. Recommend innovative strategies to promote excellent customer service in assigned operations.

Ensure all dining/university policies, standards and procedures are communicated effectively to employees and maintained/followed consistently.

Conduct periodic audits of policy adherence, review staff over and shortages and ensure staff is properly trained in processes and procedures.

Your role as a member of the Food & Beverage Leadership Team
:

Position Summary

Manage the daily operation of The Regent Lounge -

  • Active management on-the-floor during hours of operation, generally 4:00 PM – 12:00 PM daily, with exceptions as business levels dictate
  • Manage all areas of planning and operations including Forecasting and budgeting – including weekly, monthly, and annual forecasting; monitoring and managing to the annual budget and optimizing labor costs and operating expenses.
  • Marketing and promotions – solidifying our brand through effective execution of promotional tactics including social media (Facebook, Instagram, etc.), online promotions, student organization discounts/promotions (Zink’s Club) Senior Class Council, etc.), event-based promotions that draw new and returning customers in (Educational events that provide a learning opportunity for our guests and our servers), and others as necessary.

Human Resources –

  • including hiring of full-time (bargaining unit) and student staff; employee relations; payroll/compensation; evaluations; training through programs, materials, and standards; etc.
  • Effectively manage labor cost using Workday and Unifocus, labor forecasts, and other tools such as effective cut-times, volume shifts, and other tactics to optimize labor costs.
  • Health/Safety – including food service health codes (most notably maintaining cleanliness to avoid the infestation of flies and other pests associated with beverage alcohol environments); alcohol intervention/prevention training; risk management and liability of staff and guests; familiarity with federal, state, and local Alcoholic Beverage Control laws and regulations; etc.

Guest Service –

  • including creating a welcoming and personalized lounge experience based on guests’ needs (food service, beverage service, etc.), recognizing VIP and regular guests and ensuring their needs are communicated to the team, creatively solving issues with appropriate and prompt recourse and ensuring that proper follow-up is complete

Private Events –

  • including those booked through our sales department as well as promotional events coordinated with student groups (A Capella concerts, class fundraisers, social nights, etc.)

Security of Assets –

  • including but not limited to inventory controls of beverage alcohol, reporting maintenance needs of furniture/fixtures/equipment, overseeing proper cash handling, ensuring that staff and guests are acting in accordance with policies and laws, and maintaining the overall reputation of the lounge.

Support the teaching mission of The Statler Hotel –

  • including providing a quality, career-related work experience for Hotel School students, participating in educational-related activities with the school’s faculty and students, and playing an active role in the Hotel Leadership Development Program (HLDP) in conjunction with F&B department management, which includes mentoring and developing program participants into managers of the hotel that have similar responsibility and accountability as their full-time counterparts. This also includes overseeing participants’ cross-training in other departments of the hotel and helping them achieve their goals each year.

Effectively use management tools to communicate with staff, managers, and other departments –

  • including Avero (daily logbook, sales data searches, sales trends, menu dynamics, etc.), MICROS (menu screen maintenance, pricing, running outlet reports, etc.), Unifocus (scheduling, time-off requests, staff availability approvals, etc.), Workday (approving timecards, punch edits, leave/sick code approvals, etc.), Opera (check hotel statistics such as transient vs. group guest counts, occupancy, etc.), Delphi (group business, function diaries, etc.)

Required Qualifications

  • Associate’s Degree in a hospitality or business-related field is strongly preferred.
  • One-two years’ experience with proven ability to manage diverse foodservice operations, including: bar operations, upscale, casual, and quick-service dining, and special/private events.
  • Strong delegation, time management, and personnel management skills are required.
  • Proven ability to manage complex beverage alcohol inventory and beverage controls.
  • Professional demeanor indicative of what is expected in industry and ability to create, with hotel management, a dynamic experiential learning environment for students and staff.
  • Must be able to work a flexible work schedule including evenings, late nights, weekends, and holidays.

Preferred Qualifications

  • Prior hotel bar/lounge experience preferred. Bartender and foodservice training, such as TIPS and ServSafe.
  • Knowledge of marketing, social media, and creative promotion strategies.
  • Other qualifications include: -Completion of product knowledge courses similar to those offered through The School of Hotel Administration (HADM 4300 Introduction to Wines, HADM 4301 Wine and Food Pairing Principles and Promotion, HADM 4370 Seminar in Quality Brewing and Fine Beer, HADM 4360 Beverage Management)
